Q. When I buy flowers at a bodega, the flowers sometimes look perfectly fresh, but they don’t seem to have any smell. Why not?
A. Mother Nature didn’t create those wonderful smells for you or your beloved. Alex Feleppa, director of horticulture at the Horticultural Society of New York, said she is always reminding people that the aromas are meant for bees and other pollinators.
Once a flower has been pollinated, Ms. Feleppa wrote in an e-mail message, it often loses its scent because it is no longer needed. “In most cases,” she added, “the goal has been achieved and the task accomplished. End of fragrance.”
The other big reason is the simple economics of the cut-flower industry. As Amy Stewart noted in her book “Flower Confidential,” many cut flowers were bred for shipping, color and shape, not for scent. And so the scent disappeared.
